A.M. Delight Muffins

Yield: 18 Muffins

    2 c All-purpose flour
    3/4 c Sugar
    2 ts Baking Soda
    1 1/2 ts Ground Cinnamon
    1/2 ts Salt
    3 Eggs
    1/2 c Vegetable Oil
    1/2 c Milk
    1 1/2 ts Vanilla Extract
    2 c Peeled Apples; chopped
    2 c Carrots; grated
    1/2 c Flaked Coconut
    1/2 c Raisins
    1/2 c Sliced almonds

In a large bowl, combine flour, sugar, baking soda, cinnamon and salt. In another bowl, beat eggs; add oil, milk and vanilla, mix well; stir into dry ingredients just until moistened. Fold in the remaining ingredients. Fill greased of paper lined muffing cups three-fourths full. Bake at 375 degrees for 20-25 minutes or until muffins test done.
