Prunes dried diced 1.00 LB
Rum Flavor .75 CUP

Orange Zest 1.00 EA
Lemon Juice .25 CUP
Orange Juice .13 CUP

Butter and line bottom and sides of a 1/2 sheet pan (12"x16")
In a bowl whisk together all dry ingredients. In a large heavy saucepan heat honey and maple sugar over low heat until sugar is dissolved. Remove pan from heat and stir in liquids (juices and rum). Stir in flower mixture and cool dough for 5 minutes.
With floured hands press 4 lbs of dough evenly into a 1/2 sheet pan.
Bake at 300 F for 25 - 30 minutes, or until firm but not dry and hard. Let cool in pan. Invert baked dough onto cutting board and cut into 2 by 1 1/2 inch rectangles.

Yes, you can replace the maple sugar with regular sugar is you prefer.
