Measurements

Hot Milk Sponge Cake

Yield: 9 Servings

1 c Flour
1 t Baking powder
2 Eggs
1 c Sugar
1/2 c Milk
2 T Butter

Preheat oven to 350F. Grease a 9x9x2" baking tin. Mix together the flour, baking powder and about 1/4 of a teaspoon of salt. In a small bowl, beat the eggs for at least 4 minutes, or until very thick. Start adding the sugar, mixing well, a little at a time, until all sugar is dissolved. Add the flour mixture, to this mixture and stir well, but don't overmix. Put the milk and butter in a small saucepan and heat slowly, just until the butter melts. Stir this into the cake batter and mix well. Pour into prepared baking tin.
Bake for about 25mins.
