Apple Filling for Cakes
enough for one 9" cake
3 large tart raw apples, grated
juice of 1 lemon
dash of salt
1/2 cup sugar
Peel apples and remove seeds. Place apples in food processor on "grate" speed. Mix all ingredients well along with the grated apples. Cook in a double boiler until thick. Cool and spread between white or spice cake layers.
1) Can also be used on muffins. Place 2 Tbs. of apple filling in the middle of the batter before baking.
store up to 3 days in a small bowl with a lid, or tightly covered plastic wrap.
Purchase an apple peeler to make peeling and coring your apples easier.
