Greek Lentil Salad

serves about 8

Delicious salad with a lot of nutrients to fuel your body. 

2 cups dried lentils
2 oranges
3 Tbs. lime juice (fresh is best)
1/2 tsp. orange rind, grated
1/2 tsp. lime rind, grated
1 small carrot, grated
1 red onion
1/2 cup raisins
1 clove garlic, minced
3 Tbs. balsamic vinegar
2 Tbs. olive oil
ground pepper
pinch of salt
1/2 red bell pepper, minced
1/2 yellow bell pepper, minced
1/2 cup each fresh parsley, chives and mint, minced

Boil about 6 cups of water in a large saucepan. Rinse lentils in colander and add them to boiling water. Simmer (without stirring or lentils will break) for 20-30 minutes until tender. Add more water if water level gets low. When tender, drain lentils and rinse with cold water. 

Add oranges, lime juice, orange and lime rinds, carrots, onion, raisins, garlic, vinegar, olive oil, pepper and salt. toss in a bowl and cover. Chill for at least 4 hours. 1 hour before serving add bell peppers and herbs.

For lower in fat omit olive oil or cut to 1 Tbs.
