Garlic Mashed Potatoes

serves 4

These simple and very tasteful mashed potatoes will be a perfect addition to any meal.

2 lbs russet potatoes (just weigh them at the grocery store)
8 large unpeeled garlic cloves
1 1/2 tsp. salt
Fresh ground pepper
1/4 cup extra virgin olive oil

In a large saucepan, place the garlic cloves, salt and potatoes and cover with water. Bring to a boil, partially cover and cook for 30 minutes or until soft.

In a separate bowl, drain the potatoes and garlic (DON'T TOSS OUT THE WATER.) Now boil the potato water and keep 1 cup.

Peel the garlic and potatoes (you don't have to peel the potatoes, I actually don't for added texture.) Mash the potatoes with a masher in your large saucepan. Turn the heat back on and whisk in enough potato water (you can use 1/2 milk and 1/2 water for a creamier taste) to bring the potatoes to a thick, creamy consistency. Season with salt and freshly ground pepper. 

Heat the olive oil and drizzle desired over each portion just before serving.
