Jam filled Cookies

5 Cups flour
1 Cup sugar
2 Cups butter, cold
4 large egg yolks
2 large eggs
1 Tbs. vanilla extract
1/2 Cup your favorite flavored jam

Pre-Heat oven to 350 degrees. Stir together flour and sugar in large bowl. Cut butter into flour mixture using pastry blender (the mixture should resemble peas.) 

Add the egg yolks, 1 whole egg and vanilla. Stir well.

Roll out dough in batches on lightly floured surface to 1/8-inch
thickness. Cut out dough with 2-3 inch round cookie cutter. 

place 1 Tablespoon of jam in each cookie and fold the cookie in half pinching down to close.

Place on lightly greased baking sheet.

Beat remaining egg and brush over cookie tops.

Bake cookies until set and tops are slightly golden, 7 to 9 minutes.
Cool completely on wire rack.
