Pork Chops of Italy
Serves 6

2 Tbs. shortening 
6 loin pork chops 
1 cup sliced Italian squash 
1 medium onion, chopped 
1 cup water 
2 8-oz. cans tomato sauce 
1 tsp. sugar 
1 tsp. oregano 
1/4 tsp. garlic salt 
5 medium potatoes, quartered 
grated Romano cheese 
Salt and pepper to taste

Melt shortening in large skillet. Add pork chops and brown quickly on both sides. Remove chops and drain off all but 2 tablespoons of fat. 

Cook onion and squash in remaining fat for about 3 minutes, or until onion is soft. Add tomato sauce, water, sugar, and seasonings. Heat to boiling and cook for 5 minutes. 

Arrange potatoes in large, shallow baking dish or casserole. Place pork chops on top of potatoes and cover with sauce. Cover casserole with lid or foil. Bake at 350 degrees for one hour.

Remove cover and sprinkle with grated cheese. Return to oven and bake 15 minutes longer.
