This is a light whole wheat bread.Prepare sponge: 1/4 cup honey2 1/2 cups milk, scalded and cooled to lukewarm 1 Tbsp. active dry yeast 2 cups unbleached white bread flour 2 cups whole wheat flour or proportion according to taste Add to above, knead and let rise: 1 Tbsp. salt1/4 cup butter, softened 1 cup wheat germ 1 1/4 cups unbleached white bread flour 1 cup whole wheat flour or proportion according to taste Optional third rising. Note: FDA labeling - this recipe can not be labeled as Whole Wheat Bread, as it contains white flour.
