White Supreme Muffins
Yield: 30 Servings
2 c Flour
1 T Baking powder
1 t Salt
3/4 c Butter
1 1/2 c Sugar
1 1/2 t Vanilla
1 c Milk
5 Egg whites
Grease and lightly flour muffin pans or line with paper cups. Mix flour, baking powder and
salt and set aside. In a separate bowl, cream butter, add sugar and vanilla and mix well,
until very fluffy. Add flour mixture and milk alternately. In a separate bowl (making sure
beaters are very clean), beat the egg whites until stiff. Fold this mixture gently into
the batter. Pour it into the muffin tins.
Bake at 375F for about 20 minutes. Cool on a wire rack.
