1/2 cup powdered sugar
1 1/2 cups flour
1/2 tsp. salt
3/4 cup butter, cut into small pieces
1 1/2 cups sugar
rind of lemon, grated
1/2 cup lemon juice, fresh
3/4 cup whipping cream
powdered sugar, for dusting
Preheat oven to 325 degrees F. Spray a 9 X 13in baking pan.
Mix sugar, flour, and salt into a bowl. With a pastry blender, cut in the butter really well. Press the mixture into the base of the pan. Bake until golden brown, about 20 minutes.
For the topping, whisk the eggs and sugar together until blended. Add the lemon rind and juice, mix well.
Lightly whip the cream and fold into the egg mixture. Pour over the lemon bars and return to the oven. Bake until set, about 40 minutes. Cool completely before cutting into bars. Sift a small amount of powdered sugar over each bar.
