Fried Scampi and Mushrooms
Serves 4

1 egg 
dry white bread crumbs
12 oz. frozen scampi 
1/2 lb. button mushrooms 
2 Tbs. French dressing 
Oil for deep frying
slice of lemon

Wipe the mushrooms (there is no need to peel them), toss them into the French
dressing and leave them for ten minutes.

Beat the egg and coat the scampi. Toss the scampi in the breadcrumbs to coat. Drain the
mushrooms and coat them in the same way.

Heat the Oil (if you are using a thermometer, to 360 degrees.) fry the scampi for
three or four minutes. Drain them on a paper towel. Fry the mushrooms for
two minutes.

Place the scampi on the center of a plate, surround them with the mushrooms, and
garnish with lemon.

The scampi and mushrooms can be fried beforehand, kept in a warm (but not hot) oven, and garnished at the last minute.
