BROWNIES Overall timing : 45 minutes plus cooling Makes 30 Ingredients: 125 g Plain dessert chocolate 125 g Unsalted butter 5 ml Vanilla essence 4 Eggs 2.5 ml Salt 400 g Caster sugar 125 g Plain flour 125 g Walnuts Methods: 1) Preheat the oven to 350F Gas 4. 2) Put chocolate into a bowl with the butter and vanilla essence and place over a pan of simmering water. Stir till melted, then remove bowl from pan and cool. 3) Whisk eggs and salt till pale and fluffy. Sprinkle the sugar on top and continue whisking till evenly mixed. Fold in the chocolate mixture with a metal spoon, then fold in the sifted flour and coarsely chopped nuts. 4) Pour into a greased and lined 23x33 cm tin and smooth the top. Bake for about 25 minutes till firm. Cool in the tin, then cut into squares. If serving as a dessert top the brownies with whipped cream.
