Lobster Liza
Yield: 2 Servings 
 
1 T Butter 
1 Shallot, chopped 
1/2 Green pepper, chopped 
1/2 lb Chopped, cooked lobster meat 
3/4 c Thick tomato sauce, heated 
1 1/2 t Lemon juice 
1/4 c Grated fresh parmesan cheese 
Salt and pepper to taste 
Toasted white bread 
 
Heat butter in a saucepan. Cook the shallots and pepper for about 3 mins. over low heat.
Mix in the lobster meat and tomato sauce; season well and add lemon juice. Cook ober low
heat for 2 to 3 minutes. Correct seasonings and spoon mixture over toast. Top with
parmesan and broil for about 2 to 3 minutes in oven. (A perfect appetizer for Valentine's
day dinner for 2!)
