Chicken Cordon Bleu

Eliminate the step of crushing cornflakes by purchasing cornflake crumbs which are in the baking aisle of your grocery store.

4 skinless, boneless chicken breasts (about 1 lb.)
4 thin slices of low-fat ham (about 1/2 oz. each)
2 Tbl. skim milk
1/4 cup cornflake crumbs
2 oz. reduced-fat Swiss cheese

Preheat oven to 400 degrees. Cut a pocket in each breast and tuck in one slice of ham. Roll in milk and then cornflake crumbs. Arrange in an 8" x 8" pan that has been sprayed with non-stick cooking spray. Bake for 25 minutes. Top each breast with 1/2 oz. of cheese and return to oven until cheese is melted.

Per serving: 218 calories, 7 grams carbohydrate, 33 grams protein, 6 grams fat
Exchanges: 1/2 starch, 4 1/2 very lean meat
