 German Potato Salad
serves 10
This delicious potato salad is brought all the way from Auckland, New Zealand by a daily recipe member named Linda Partridge.  Linda says this recipe is quick and easy. 
 
8 potatoes washed, diced and cooked. (Don't peel them) 
1 Cup Mayonnaise 
1 Heaped teaspoon Whole seed Mustard 
2 Large Gherkins (better known as pickles,) (Diced Small) +1 for decoration (optional) 
 
In a large saucepan, put in potatoes and 8 cups of water and bring to a boil until soft. Drain.  While still warm, add diced gherkins (pickles.)  
 
Mix together mayonnaise and whole seed mustard.  Stir into the warm potatoes. 
 
Sprinkle with a small amount of finely chopped Parsley.  Serve.  
 
Slice 1 pickle and fan out.  Place on top of salad for decoration.
