 Cranberry Quick Bread
12-14 slices
Great for a company breakfast or for a dessert after dinner. 
 
2 cups flour 
1 tsp. baking soda 
1 tsp. salt 
3/4 cup sugar 
1 egg 
1/3 cup orange juice 
3 Tbs. white vinegar  plus water to make 2/3 cup 
1 tsp. grated orange rind 
1/4 cup melted shortening 
1 cup halves or coarsely chopped raw cranberries 
1 cup chopped nuts 
 
Pre-heat oven to 350. 
 
In a large bowl, Sift together flour, soda, salt and sugar. 
In a small bowl, beat egg; add liquids, orange rind & melted shortening to the egg mixture. 
 
Add all to flour mixture.  Stir until flour is just dampened. 
Add cranberries & nuts. Stir just enough so that it is blended well. 
Turn into greased  8 × 4 loaf pan.  
 
Bake at 350º for 60-70 minutes. 
Remove from pan & cool several hours before slicing.
