 Butter-Steamed Squash 
Serves 4
6 medium squash (use a variety of Italian, summer, winter..etc)  
1 red bell pepper 
water 
1 Tbs. olive oil or butter 
1/4 tsp. cumin 
ground pepper 
 
Wash and slice the squash and bell pepper.  Steam with water until tender.   Drain and put into a hot frying pan greased with olive oil or butter. Season with cumin. Sauté lightly and serve with a sprinkling of pepper.
