Non-Dairy Chocolate Cake
Servings: 18

Cake Batter:
1-1/2 cups flour
1 cup soy or rice milk
1/4 cup granulated fructose
2/3 cup canola oil
1/2 cup unsweetened cocoa powder
2 eggs
1-1/2 teaspoon baking soda
1 teaspoon salt
  1. Preheat oven to 350F.
  2. Grease and flour a 10" cake pan.
  3. Combine all ingredients in a mixing bowl and beat just until blended.
  4. Pour into prepared pan and bake for 50-55 minutes.
  5. Let cool and serve.
